The making of Borsh

Illa Gladshtein was one of the 2022 artists in residence at Timelab. As a Ukranian refugee he used his time in Ghent to support the local Ukranian community, connect networks and help refugees and hosts to find reciprocity. By making borsh at the local farmers market he expressed the generosity of sharing food and culture. By doing this he inspired the foodlab in Timelab, but also instigated a recurred action of local chefs to collaborate with farmers and cook during the Saturday market activities.
